Mexican Black Bean Chicken


Mexican for dinner tonight!!! I have been craving something spicy. Here is a healthy chicken recipe. Very simple. Includes whole ingredients.

  1. 1 C Black Beans
  2. 1 C Frozen or fresh corn
  3. 1/3 C Chopped onions
  4. 1 can Rotel
  5. 2 Chicken Breasts- taco seasoned
  6. 1 C cooked Brown Rice

Optional: Shredded cheese, tortilla chips, sour cream

For this recipe first baked chicken breasts at 350 degrees until up to temp. Prior to placing in oven I season chicken with cumin, garlic powder, onion powder, and chili powder.


Prepare rice as directed. In skillet sautΓ©e onions. Add corn, beans, chicken, and Rotel and cook until heated through. Mix in cooked rice. Enjoy! Can top with shredded cheddar cheese if desired. I live in Wisconsin for cheese is a must for me but it’s still great without it. Β Also amazing with tortilla chips! Look corn tortilla chips, much healthier then white flour tortilla chips.
