Add vegetables to traditional Chili to make veggie chili! A healthier spin of the classic recipes is super quick and easy. You could keep the ground beef or decide to leave it out. The vegetables add bulk and fiber. This is also low carb.
1. Brown 1 pound of ground beef. 2. Sauté 1/2 of medium onion and 1/2 a green bell pepper. 3. Drain meet and season with 2 TBSP chili powder, 1 T cumun, 1tsp garlic powder, 1 tsp onion powder, and salt & pepper. 4. Add 1 zucchini squash. You can also add other veggies such as carrots, mushrooms, etc. Add one can of each: chili beans, Rotel, and diced tomatoes. 5. Bring to boil, then simmer until squash is to desired tenderness. 6. Enjoy!! Add toppings of choice.
